Abstract
Eicosapentaenoic acid (EPA) (C20 : 5n - 3) is a long-chain polyunsaturated fatty acid produced almost exclusively by marine organisms. The aim of this chapter is to discuss the antimicrobial properties of EPA, specifically its spectrum of activity and potency, likely mechanisms of action, safety, and biotechnological exploitation.
